weekend roundup

friday, we were invited to go to new friend marlene's house for a new new orleaans style dinner. for dessert, we were to have lemon soufle from msl 2/06. i was excited for this all week. without our stuff and without much money, we've been eating pretty plain. i think micah was excited also, for friday night he put on a clean (not trader joe's) t-shirt. my dreams were dashed when poor marlene caught the flu and wasn't well enough to make the new orleans style feast. so, nate, jessica, micah and i went to a bar and ate bar food and drank bar beer. that was fun enough, but i really wanted that soufle.

saturday, i wasn't going to do anything. but instead i participated in "7 band saturday". we watched 7 freaking bands. starting at 3pm and going all the way to 2am. out of 7, i enjoyed 2. it was a long day with but a short dinner break to bring jessica soup (she had caught the flu by then) and to pick up brent for round 2.

we ended up in bed around 3am, and planned to skip church and sleep as long as possible. around 10:30am, our phones wouldn't stop ringing. they rang on and off for about 10 minutes before we decided to check the messages. i activated the voice mail, put the phone on my pillow and with my eyes shut heard dad's urgent voice say, "e.j. where the hell are you? the movers are outside your house!". we both jumped up, looked put the window and saw the most beautiful sight beheld...our stuff.

we weren't expecting our stuff until wednesday, so this was a big, lovely suprise. i furiously unwrapped my things like it was christmas morning. it was bizarre to see things i hadn't seen since october. i felt like i should have a sit down with each item. it's gonna be okay, conatiner where the q-tips go. this is philadelphia. it's okay to be afraid. i was afraid, but now i'm not.

it's now tuesday, a tuesday where i can honestly say that my favorite things to do are eating soup with spoons and staring at my wonderful mess of boxes with a full heart.

Lemon Souffle

3/4 Cup sugar
1 Cup water
3/4 Cup lemon juice (3 to 4 lemons)
1/4 Teaspoon salt
2 Envelopes unflavored gelatin
4 eggs -- separated
2 Teaspoons grated lemon peel
3/4 Cup sugar
2 Cups whipping (heavy) cream

Make a 4-inch band of triple-thickness aluminum foil 2 inches longer
than circumference of 6-cup souffle dish. Extend dish by securing
band around top edge. (A 2-quart round casserole can be used instead
of souffle dish and foil band.)
Mix 3/4 cup sugar, the water, lemon juice, salt and gelatin in
saucepan.
Beat egg yolks slightly; stir into gelatin mixture. Heat just to
boiling over medium heat, stirring constantly; remove from heat. Stir
in lemon peel. Place pan in bowl of ice and water, or refrigerate 20
to 30 minutes, stirring occasionally, just until mixture mounds
slightly when dropped from a spoon. If mixture becomes too thick,
place pan in bowl of hot water; stir constantly until mixture is of
proper consistency. Beat egg whites in large bowl until foamy. Beat
in 3/4 cup sugar, 1 tablespoon at a time; continue beating until
stiff and glossy. Do not underbeat. Fold gelatin mixture into egg
whites. Beat whipping cream in chilled medium bowl until stiff. Fold
whipped cream into egg white mixture. Carefully turn into souffle
dish. Refrigerate about 8 hours or until set.
Just before serving, remove foil band. Refrigerate any remaining
souffle.
12 SERVINGS; 260 CALORIES PER SERVING.
